Can you make a Spanish Omelet without a Spanish person???
No... no you can't.
I have been lucky enough to have eaten a number of Spanish omelets made by actual Spanish people. They did not look how mine turned out. Though it may have tasted well, it did not have that wonderful smooth, perfect shape right out of the pan. I think that's something that comes from growing up making the traditional omelet, and having your mother show you how to do it... plus a little magic.
I'm all about energy foods now that the 1/2 marathon is tomorrow.
It seemed like the perfect meal.
Preparing for tomorrow...
